Or more frustrating than trying to eat them and ending up with purple stained fingers? But we digress. The point is, pomegranates are delicious, and when made into a margarita, they are even better. Enter the Skinny Pomegranate Margarita.

It’s the perfect balance of sweet and tart, with just a hint of tequila to give it that classic margarita flavor.

Pomegranates make for a refreshing, tart and slightly sweet addition to any drink and we think they pair perfectly with tequila. And, because we’re always looking for ways to lighten up our cocktails, we’ve created a version of this margarita that uses agave nectar instead of the traditional syrups or processed sugars.

Now don’t worry – you’re not going to have to cut up a pomegranate to deseed and juice it one by one. We’re going to use pomegranate juice that you can find at most grocery stores. You’ll just need to be sure that you’re getting 100% pure pomegranate juice and not a sugary pomegranate-flavored drink.

The Skinny Pomegranate Margarita is sure to be a hit at your next party! It’s light, refreshing and has just the right amount of sweetness. We love how unique this margarita is – it’s definitely a far cry from the same old, same old.

To get started making this Skinny Pomegranate Margarita recipe, you’ll need to start with the following ingredients.

  • Tequila – we prefer a blanco Tequila. Choose your favorite!
  • Pomegranate Juice – make sure you buy the pure form with no added sugar
  • Limes – Fresh lime juice is a must, this is a staple in any margarita. So make sure to have plenty of limes on hand depending on how many servings you are planning.
  • Sugar Free Pink Lemonade – There are a few brands that offer this (minute maid, florida natural) so it should be readily available at your grocery store.
  • Pomegranate Fruit Whole – Don’t worry – this is just for garnish, we’ll just use a few seeds or slices.

HOW TO MAKE A SKINNY POMEGRANATE MARGARITA

  1. Fill a cocktail shaker with ice.
  2. Squeeze a lime to get the fresh juice
  3. Add the tequila, pomegranate juice, and sugar free pink lemonade.
  4. Shake well (about 30 seconds)
  5. Add a little lemonade to the stevia & rim the glass
  6. Add ice to a glass and pour the mixture in from the cocktail shaker.
  7. Garnish with a few pomegranate seeds & fresh lime wedges.

VARIATIONS OF THE SKINNY POMEGRANATE MARGARITA

There is always a way to add a variation! What about trying the following ideas?

Regular Sugar Free Lemonade: If you can’t find sugar free pink lemonade, feel free to sub in regular sugar free lemonade.

Agave: Don’t want to run to the store to grab the sugar free lemonade? Have some agave in the pantry? Feel free to replace the lemonade with agave; it will bring the sweetness that the lemonade did (but not the tartness)

Pineapple Juice: Want to add a little something extra? Try replacing the lemonade with a splash of pineapple juice. It goes great with the pomegranate and lime flavors!

Soda Water: If you want a lighter drink, you can always replace the lemonade with soda water. This will make the drink less sweet and more refreshing.

Coconut Water: Another way to lighten up the drink is to replace the lemonade with coconut water. This will give the drink a tropical twist

There’s nothing like a refreshing cocktail on a hot summer day. And my Skinny Pomegranate Margarita is the perfect drink to enjoy poolside or at your next backyard barbecue. But how should you serve it? Over ice, in a rocks glass, is my personal favorite.

The ice helps to keep the drink cold and the rocks glass gives it a nice solid feel. But if you’re feeling fancy, you could also serve it up martini-style in a chilled glass or even any regular cocktail glass. Either way, you’re sure to enjoy this delicious and refreshing cocktail.

CAN I MAKE THE SKINNY POMEGRANATE MARGARITA FROZEN?

Definitely! Just add all of the ingredients (except for the pomegranate seeds) into a blender and blend until smooth. Garnish with some fresh pomegranate seeds or a slice of lime and enjoy!

WHAT SNACKS TO SERVE WITH THE SKINNY POMEGRANATE MARGARITA?

Since we’re serving a skinny margarita, let’s keep the snacks and appetizers light as well.

  1. Gauc & Pita Chips: If there’s margaritas, it’s almost mandatory that there should be guacamole! Whip up a batch, and serve it with some baked pita chips for a perfect pairing.
  2. Mango Salsa & Tortilla Chips: Have a few extra mangos lying around? Chop them up, mix in some onion, cilantro, red & green peppers and woila – you’ve got a super light salsa to serve with your favorite tortilla chips.
  3. Chicken Lettuce Wraps: Have a little more time to whip something together? Pair chicken lettuce wraps with this margarita!

CAN I MAKE A BIG BATCH?

Yes! This recipe is easily doubled, tripled, or quadrupled. Simply multiply the ingredients by how many servings you want to make. We like to make a big batch ahead of time and store it in a pitcher in the fridge for easy access later on.

How to dry out pomegranate slices for garnish?

Place the pomegranate slices on a baking sheet and warm in a 170°F oven for 3 hours, flipping every hour. The goal is to dry the fruit without completely shriveling it up. You want the slices to keep their gorgeous color and not get too dark around the edges.
